Tash's Granola
Debbie got this recipe from Tash, and she is asked for it so often
that it is included here. Tash modified the original recipe, and the comments are from
her.
Ingredients:
- 12 cup rolled oats (I usually substitute some barley flakes, wheat
flakes, rye flakes)
- 2/3 cup sunflower seeds (raw and unsalted)
- 1 cup almonds
- 1 cup cashews
- 1 cup unsweetened shredded coconut (the bigger the shreds the better)
- 1/2 cup sesame seeds (I usually omit because they go everywhere and add little)
- 1 cup walnuts
- 1 cup pecans
- 1 cup dates
- 1 cup figs
- 1 cup apricots
- 1 cup raisins/sultans/currants
- 1 cup oil (sesame is best, but peanut is ok)
- 3/8 cup honey
- 3/8 cup maple syrup
- 1/4 tsp vanilla extract
Preparation:
- Mix dry stuff in bowl (not the dried fruit!)
- Heat oil, honey, maple syrup over low heat until warm and liquidy. I
usually do not add the vanilla...and I usually use half the amount of oil and a quarter of
a cup of honey and of maple syrup because I don't know how to measure 3/8c!!!!!!! You can
always heat more if you feel the dry stuff is not covered enough. I think Mark adds
cinnamon to this. Oh, by the way...these ingredients never seem completely mixed (if at
all), but just pour and it will be fine.
- Pour oil etc. over dry stuff and mix.. apparently the secret is to
get every single bit covered with some of this goop...experiment.
- Bung this stuff in oven already at 300 and bake for an hour and a
1/4... granola will be brown-ish. Stir every 15 minutes so it all gets evenly zapped.
- Cool and stir in the chopped up dried fruit.
- Put in jars and the recipe says you should refrigerate..I don't.
- Mark tells me that one can also throw in wheat berries, oat bran,
pumpkin seeds etc....but I haven't tried those yet.
- Did I mention I never measure any of the ingredients...I just play
it by ear... I like more nuts/fruit to oats than the recipe calls for but it's up to
you... but oats are boring.
