Apple Cake
This is my mother's recipe for a parve apple cake. I called for it after we got
back from picking apples and we needed to do something with a bag containing more apples
than we usually eat in a season. Luckily, we had all of the ingredients on hand, so
it worked out well.
Ingredients:
- 3 cups sifted flour
- 2 1/4 cups sugar
- 1 cup cooking oil
- 1/2 cup orange juice
- 4 large eggs
- 1 tsp salt
- 3 tsp baking powder
- 3 tsp vanilla extract
- 1 tsp cinnamon
- 4-5 apples, cored, peeled, thinly sliced
Preparation:
- Combine flour, 2 cups sugar, oil, orange juice, eggs, salt, and baking powder
- Beat until smooth
- Add vanilla extract
- Pour half of the mixture into a greased and floured 10" tube pan
- Put sliced apples all around the pan
- Mix remaining sugar and cinnamon, sprinkle over the apples
- Add the remainder of the mixture
- Bake 1 hour 30 minutes at 350 degrees
