Famous Swiss Chocolate Pie
A long time ago (before I was married) I went on a ski weekend to Stowe, VT. I like skiing at Stowe - pretty challenging trails - but this particular weekend was bitter cold, so instead of skiing on Sunday, we spent most of the day trying to get cars started. My car started, but the driver's window froze in a partially down position, which was a serious annoyance for the 3 ½ hour ride home. Anyway, we had lunch at a restaurant in Stowe where they made a Swiss Chocolate Pie that was not listed on the menu, kind of like an unmarked ski trail that only locals knew about. It was fantastic, and when I actually made it for the first time almost eighteen years later, it tasted as good as I remember.
Crust Ingredients:
- 6 oz. Famous chocolate wafers (crushed)
- 1/3 cup melted butter
Preparation:
- Mix together and press into a 9" pie plate.
- Chill the crust while you prepare filling.
Filling Ingredients:
- 6 oz. semisweet chocalate (melted)
- 9 oz. cream cheese
- 1 tsp. pure vanilla extract
- 1/2 cup sugar
- 2 eggs, separated
- pinch salt
- 1 cup heavy cream
- Lightly sweetened whipped cream (for topping)
Preparation:
- Beat the egg whites with salt until they hold a soft shape
- Gradually add 1/4 cup sugar and beat until firm but not dry.
- Beat cream until semi-firm.
- Beat cream cheese until smooth. Add vanilla and 1/4 cup sugar, add egg yolks one at a time, add melted chocolate.
- Gently fold in the cream and then the egg whites.
- Turn the filling into the prepared crust and chill at least 5 hours.
- Top with whipped cream.
